Mini Cupcakes with a Hint O’Baileys

Happy St. Patty’s Day! Or Green Beer Day for all my fellow Miami alumni out there :D. These cupcakes are a quick and fun treat for your St. Patrick’s Day celebrations. I made them for my office as a little treat for the day, and everyone especially loved the hint of Bailey’s in the frosting. Enjoy!

Mini Cupcakes with a Hint O’Baileys

48 mini cupcakes *I made mini cupcakes, but these could be made the same way for normal sized cupcakes!

1 Box of Gluten Free Yellow Cake/Cupcake Mix (or sub your favorite box mix)
Splash of Baileys Irish Cream

Splash of Baileys Irish Cream
4oz Cream Cheese, Softened
4oz Butter, Softened
2 Cups Powdered Sugar
2 Teaspoons Vanilla Extract
Green Food Coloring

Make your box cupcake mix first, and add a splash of Baileys to the mix if you want! I added maybe about half a shot to the cake mix itself. Bake according to directions. If you used the same Betty Crocker Mix I used, I baked my mini cupcakes for about 12 minutes at 350°.

While the cupcakes are baking, get started on your frosting. In a large bowl, use an electric mixer to cream together the softened cream cheese and butter until light and fluffy, about 2 minutes. Add your vanilla extract, and then slowly add in the powdered sugar until thoroughly combined. At this point, mix in your Baileys to taste (I used about half a shot). After everything is mixed, add in your green food coloring! I used about 8 drops, but just go two drops at a time until you achieve the desired color you are looking for.

After the cupcakes have cooled, frost and enjoy!
