Sweet Potato Gnocchi

We decided to stay in for Valentine’s Day dinner this year, and needless to say, I wanted to whip up a feast! I decided to give this Gluten Free Sweet Potato Gnocchi recipe a try to go with our steaks. It’s only 5 ingredients, which made preparing dinner immensely easier!

Overall these turned out really great. I would be curious to substitute normal gluten free all purpose flour for them over the almond flour, as I could taste the almond flour a bit prominently. Not necessarily a bad thing, just gave them a distinctly nuttier flavor. Hope you enjoy this treat as much as we did!


5 Ingredient Gluten Free Sweet Potato Gnocchi

Serves 2 *I doubled this recipe, which made a normal amount to me with some leftovers

1/2 cup + 2 tablespoons of mashed & smooth, roasted sweet potato
1/4 cup Millet flour
1/4 cup + 1 tablespoon Almond Flour
1/4 cup + 1 tablespoon Tapioca starch

Mix all dry ingredients together in a large bowl. Create a well in the middle of the dry ingredients, and add your sweet potato. Lightly begin to need in the flour, until it looks well blended. Form a ball with the dough – worth noting, this recipe says to add more flour if the dough is still too sticky, which I did need to do.

If its too sticky, add another tablespoon of almond flour, and 1/2 tablespoon of tapioca starch.

Refrigerate for 30 mins. I found this helped keep the sweet potato a bit more solid. Flatten into disc, and cut into fours. Dust the surface of a silpat with millet flour. Roll out each piece until you have a roll about 6 inches long and 1/2 an inch wide.

Cut your gnocchi into 1 inch pieces!

Add your gnocchi to a pot of boiling water, and cook until they float to the top. Remove them with a slotted spoon, and refrigerate for 5 minutes.

I sautéed mine in a Brown Butter Sage Sauce, which was delicious with our steak.

 

Brown Butter Sage Sauce

Adapted from Mario Batali’s recipe here

4 Tablespoons of butter
1 Tablespoon of ground sage
3 Tablespoons of lemon juice
Freshly Ground Pepper to taste
Salt to taste

Add butter to a 12 inch sauce pan, and cook until butter turns just to a light golden brown color. Add sage, salt, pepper and lemon juice and remove from heat. When your gnocchi is ready, heat the pan over medium high heat, and sauté your gnocchi in the brown butter sauce for about 5-7 minutes, or until golden brown. Enjoy!
